Cosy Ginger Biscuits

Is there truly anything cosier switching off at the end of the day with a gigantic mug of tea and plate of biscuits? These ginger biscuits have a bit of a punch and a gorgeous smoothness, thanks to the addition of Lyle's Golden Syrup. They’re perfect for dunking. They’re delicious. And easy to make. And you’ll most certainly eat them all. Happy baking!

Ingredients
  • 100g butter
  • 70g light brown sugar
  • 1 heaped tablespoon fresh ginger, grated
  • 100g Lyles Golden Syrup
  • 250g self raising flour
  • 2 tbsp ground ginger
  • 1 tsp bicarbonate soda
  • 1 egg yolk, beaten
Instructions
HOW TO MAKE THIS RECIPE

 

1. Melt the butter, golden syrup, sugar and fresh ginger together over a low heat and leave to cool

2. Mix the dry ingredients together, stir in the cooled mixture and the egg yolk and knead together to form a dough

3. Roll the dough into small balls and put on a lined baking tray with enough space between so they can spread.

4. Bake at 190C, or 170C Fan oven, for 10-12 mins, until golden brown. Cool on a rack. Then dunk in your tea. Then do it again.
