Fry chopped chorizo on medium-high heat until the oil seeps out. Set to one side.
Whisk together the flour, baking powder, salt and eggs in a bowl, then gradually add the milk until it thickens. Stir in the finely chopped spring onions, chorizo, and cheese.
Heat a buttered pan over medium-heat. Spoon in batter, cook until it bubbles, flip, and cook for another minute. Remove from pan.
Fry the chopped bacon with butter until the desired crispiness is achieved.
Stack pancakes, top with chilli jam, crispy bacon, and more spring onions, and drizzle with Lyle’s Golden Syrup for a swavoury taste sensation. Enjoy!
