This recipe reimagines the traditional crêpe with a savoury twist. In a bowl, whisk together flour, egg, and milk into a smooth batter. Rest for 30 minutes.
Mix together some of the spring onion and dill wth the lemon juice and creme fraiche then set aside.
Heat a buttered pan over medium-high heat. Ladle batter, swirl around to coat the pan, sprinkle with remaining spring onions. Cook for 1 minute, flip, and for 30-45 seconds.
Spread the creme fraiche on half of each crepe, add smoked salmon, and then fold twice.
Drizzle with Lyle’s Golden Syrup for the perfect swavoury dish and garnish with spring onions to finish. Enjoy!
