Lyle's Golden Syrup Toffee
In a heavy based saucepan, combine the Lyle’s Golden Syrup, soft dark brown sugar, unsalted butter, and pinch of salt.
Gently heat, stirring continuously. Once everything has melted, increase the temperature, heating until the mixture reaches 140C on a sugar thermometer. If you don’t have a thermometer to hand, you can test the readiness of the toffee by dropping a small dollop of mixture into a bowl of cold water. If it hardens immediately, it’s ready to pour.
Carefully transfer the mixture to a 20cm square tin lined with greaseproof paper. Sprinkle the top with sea salt flakes, or whatever decorations you have in mind.
If you’re planning on scoring the toffee, leave it to set for 30 minutes before running a knife over the top. If not, you can leave it to set completely and have some fun with an old-fashioned toffee hammer.
Break the toffee into pieces. Wrap in squares of parchment or leave loose, stored in a cool, dry place.
