These mini banana pancakes bring the delicious taste of pancakes with a creamy and soft banana centre. Top with Lyle's Golden Syrup for a breakfast or brunch treat.
Instructions
Sift the flour in a large bowl and make a well in the centre - then pour the vegetable oil, egg yolk, milk and egg into a jug and lightly beat together. Gradually add this to the well in the flour, whilst whisking and slowly drawing in the flour until you have a smooth batter.
Slice your banana into 2cm chunks and dip each one in the batter, fully coating it.
Cook the pancakes in a non-stick frying pan for 20-30 seconds each side or until golden.
Add the mini pancakes to a bowl and drizzle with Lyle’s Golden Syrup.
