Gingerbread Gift Box

Step 1

Sift together the plain flour, ground ginger, and bicarbonate of soda.

Step 2

Combine the Lyle’s Golden Syrup, butter, and soft dark brown sugar in a saucepan. Gently heat until fully melted.

Step 3

Stir the liquid ingredients into the flour mixture. Gently knead the dough to bring it together.

Step 4

Roll the dough out onto a sheet of baking paper. Cut out four 4x4 inch squares and bake in the oven for 8-12 minutes at 200C/180C (fan)/gas mark 6.

Step 5

While the gingerbread cools, whisk together the egg whites, icing sugar, and lemon juice until thick.

Step 6

Decorate the panels and leave to dry completely.

Step 7

Using a square cake card (or piece of card wrapped in foil) as a base, use the icing to stick the four panels together. Seal the edges with a thick seam of royal icing to prevent any breakages.

Step 8

Fill the box with Golden Syrup toffees. Wrap in a sheet of cellophane and seal with a big, jolly bow.
