These delicious, soft, and chewy cookies are studded with creamy butterscotch and yummy chocolate chips. Perfect for gifting to friends and family during the festive season and beyond!


Butterscotch Cookie Recipe
In a large bowl, combine melted butter, Lyle’s Golden Syrup, sugar, egg and vanilla and whisk for a couple of minutes until smooth. In a separate bowl mix the flour, baking soda and mixed spice.
Add the flour mixture into the butter and egg mixture and fold until just combined. Add the butterscotch and chocolate chips and fold until evenly combined. Place the cookie dough in the fridge and chill for minimum 1 hour, or ideally overnight.
When ready to bake, line two large baking trays with baking parchment and preheat the oven to 170°C. Using a cookie scoop or a measuring spoon, scoop the cookie dough into the baking tray. Bake cookies for 10 minutes, or until the edges are golden brown and middle is still a bit soft. Remove from the oven and sprinkle each cookie with flakey sea salt.
Allow the cookies to chill on the baking trays for 5-10 minutes, then transfer into a cooling rack to cool completely. Enjoy!
