Eton Mess Porridge... it's like a pudding first thing!This creamy porridge doused in Lyle's Golden Syrup and strawberries is destined to become an eaten mess... because you cannot beat a bit of meringue in the morning!
For the Meringues
Preheat your oven to 120°C (250°F) and line a baking tray with parchment paper.
In a clean, dry bowl, whisk the egg whites and lemon juice until soft peaks form.
Gradually add the sugar, a tablespoon at a time, whisking continuously until stiff peaks form and the mixture is glossy.
Add the Lyle’s Golden Syrup and whisk until well combined.
Spoon or pipe small meringue shapes onto the prepared baking sheet.
Bake in the preheated oven for 1 hour, then turn off the oven and leave the meringues inside to cool completely.
Prepare the Porridge
In a saucepan, combine the porridge oats and milk.
Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the oats are soft and the porridge is thick (about 5-7 minutes). Add sugar if desired.
Remove from heat and let it sit for a couple of minutes to thicken further.
Assemble the Eton Mess Porridge
Divide the cooked porridge into serving bowls.
Top with sliced strawberries.
Break the meringues into pieces and scatter over the porridge.
Drizzle with Lyle’s Golden Syrup.
Serve immediately while the porridge is warm, and enjoy your delicious Eton Mess Porridge!
