These easy blueberry bars have buttery biscuit base infused with lemon, jammy layer of sweet and juicy blueberries and a crumble topping. It’s a quick and delicious dessert, perfect with seasonal berries and ideal for any gathering!
Preheat the oven to 180°C (170°C fan). Lightly grease the bottom and sides of 20cm (8 x 8 inch) square baking tin and line the bottom and sides with baking paper leaving plenty of overhang. Set aside.
In a large bowl mix together the flour, lemon zest, sugar and salt. Add the cold cubed butter and rub it using your fingers into the flour mixture, until the texture resembles the wet sand. Next, add the egg yolk and Lyle’s Golden Syrup. Mix with your fingertips or using wooden spoon until dough pieces begin to form.
In a separate medium bowl, mix frozen blueberries, lemon juice, sugar and cornflour, ensuring the blueberries are evenly coated in this mixture.
Add 2/3 of the crumble into the bottom of the cake tin and use your hands to press firmly and evenly around the bottom. Add the blueberry mixture on top and spread evenly. Sprinkle the remaining crumble mixture on top.
Bake for 1 hour. Allow to cool for 30 minutes before serving. Dust with powdered sugar and slice into bars. Enjoy!
