Prepare the Crumble

Step 1

Preheat your oven to 180°C..

In a mixing bowl, combine the self-raising flour, oats, light brown sugar, cinnamon, and ground ginger.

Add the cold, cubed butter to the mixture.

Using your fingers or a pastry cutter, rub the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 5

Spread the crumble mixture evenly on a baking tray lined with parchment paper.

Step 6

Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from the oven and let cool.

Prepare the French Toast Mixture

Step 1

In a shallow dish, whisk together the egg yolks, icing sugar, sugar, plain flour, cinnamon, vanilla extract, and double cream until smooth and well combined.

Cook the French Toast

Step 1

Heat a non-stick pan or griddle over medium heat and lightly grease with butter.

Dip each slice of brioche into the egg mixture, ensuring both sides are well coated.

Cook the soaked brioche slices in the pan until golden brown and cooked through, about 2-3 minutes per side. Adjust heat as necessary to prevent burning.

Assemble the Apple Crumble French Toast

Place the cooked French toast slices on a serving plate.
