Enjoy some delicious bacon and avocado pancakes, drizzled with Lyle's Golden Syrup.


Mix the flour and baking powder together. Beat the eggs in a bowl, with the milk and whisk in the syrup.
Create a well in the flour and whisk in the liquid and melted butter. Whisk until a smooth batter is achieved.
Heat a small knob of butter in a large non-stick frying pan heat until the butter is melted, ladle in small rounds of the batter allowing space between each round. Cook on each side for 1-2 minutes until the batter bubbles and begins to set, flip the pancakes over and cook for a further 1-2 mins on the other side until golden. Repeat this process until all the batter is used up.
Create some pancake stacks, serve with the avocado and bacon and drizzle with the golden syrup.

Melted

Vegetable oil
For cooking

Avocado
Halved, stone and skin removed and cut into slices

Rashers rindless streaky bacon
