Vegan Treacle Sponge

A classic winter warmer in a vegan version. Delicious, comforting sponge with a sticky and syrupy pool hidden underneath it. Enjoy it warm, with some vegan custard or vegan ice cream.

250g Lyle’s Golden Syrup

1 large lemon, zest and juice

150g vegan spread or vegan butter

150g Tate & Lyle Fairtrade Pure Cane Soft Light Brown Sugar

½ tsp salt

120g vegan yoghurt

150g self-raising flour

100 ml vegan milk of choice

vegan custard or vegan ice cream to serve

How to Make a Vegan Treacle Sponge

 

  1. Preheat the oven to 180°C (170°C fan). Grease 1 l ovenproof dish and set aside.
  2. In a medium bowl, combine the Lyle’s Golden Syrup, lemon juice and lemon zest. Pour this mixture over the bottom of the greased ovenproof dish and set aside.
  3. In a large bowl, cream the butter and sugar together, for about 2 minutes. Add the salt and vegan yoghurt and mix again to combine. 
  4. Add the flour and gently fold it into the batter. Pour the vegan milk of choice and stir all the ingredients together. 
  5. Pour the batter into the baking dish (on top of the Lyles Golden Syrup and lemon mixture). Use a wet spoon or spatula to spread the batter and smooth it on top.
  6. Bake for 35-40 minutes, until risen and golden brown. Serve with custard or ice cream.
