These bright Rainbow Pancakes are super fun and easy to make, and are sure to delight the little ones! Coloured using natural ingredients, they are served with a delicious and generous drizzle of Lyle's Golden Syrup.


HOW TO MAKE THIS RECIPE
Add all the ingredients to a blender and blend on high speed until smooth.
Divide the mixture between 4 bowls and add colouring to each. Blend again one by one until you are happy with the colour and the batter is smooth.
For frying, add a little butter or coconut oil to a non-stick frying pan on medium heat. Once hot, pour the batter in the pan. Fry for 1-2 minutes, run a spatula around the edges to make sure it has detached from the pan, before carefully flipping it over and frying the other side for another minute.
Transfer to a plate and repeat with the rest of the batter. Arrange them on a plate creating a rainbow and drizzle over with Lyle’s Golden Syrup. Serve warm with extra berries if you like.

Yellow colour – turmeric

Pink colour – beetroot powder

Green colour – spinach

Purple / blue colour – frozen blueberries
