Lyle's Halloumi Breakfast Burrito is a vibrant and flavorful way to start your day, combining savory scrambled eggs, creamy avocado, and perfectly griddled halloumi, all wrapped in a soft tortilla. The tangy chili and ginger glaze brings a zesty kick, complemented by a fresh, homemade salsa. This hearty and delicious burrito will add a burst of flavor to your morning routine!
Mix all the glaze ingredients together and marinade the sliced halloumi in it for 1 hour.
Chop the onions, tomatoes and garlic and mix with your other salsa ingredients and set aside.
Scramble your eggs in a frying pan on a low to medium heat with a nob of butter and set aside.
Slice your avocado, marinated peppers and set aside whilst you prepare your cheese.
Griddle the cheese for 3-4 mins on a medium heat until golden brown on the outside squidgy in texture.
Pop your burrito ingredients in rows on your wrap, leaving plenty of room around the edges to fold. Season with coriander, lime and salt and pepper to taste.
