Take a trip with these tropical inspired pancakes and enjoy the sweet taste of Lyle’s with coconut and lime.


Lyle’s Golden Syrup, Coconut and Lime Pancakes Recipe
Mix the flour, baking powder and desiccated coconut together in a large bowl, stir in the lime zest.
Whisk the eggs for a minute, mix in the milk and golden syrup, make a well in the dry ingredients and whisk in, add the melted butter and mix well.
Pro tip
Pour the batter into a jug, as this is easier to manage!
Heat a small knob of butter in a large non-stick frying pan on a medium heat. When the butter begins to bubble pour rounds of approx. 6-7cm into the pan leaving a little space in-between each one. .
Cook the pancakes for 1-2 mins on each side or until lots of surface bubbles appear. Turn them over at this point and cook on the other side for a similar time until they are a lovely golden brown colour.
Repeat the process until all the batter is used up.
Serve with Greek yogurt and a drizzle of Lyles, enjoy!
