From larder to countertop in less than an hour, these banana muffins are a super reliable, super simple recipe that we think could be your new baked go-to. Great if you have ripe bananas that need using up, or an easy homemade gift to bring a bit of delight into someone’s day, this quick treat is simply scrumptious.
Banana muffin recipe
Preheat the oven to 190C/170C Fan/gas 5. Line a 12-hole muffin tin with paper cases.
Sift together the flour, baking powder, bicarbonate of soda, and caster sugar with a generous pinch of salt.
In a separate bowl, mix the melted butter, vanilla extract, eggs, mashed bananas, 1 tsp Lyle's Golden Syrup, and buttermilk.
Create a well in the centre of the dry ingredients and pour the wet ingredients into it. Mix roughly with a fork, taking care not to over-mix. If using, add the chopped pecans and gently combine.
Spoon the mixture into the prepared muffin cases. Top each muffin with pecan halves and a drizzle of Lyle's Golden Syrup.
Bake for 20-25 minutes, or until the muffins turn golden brown.
Allow the muffins to cool on a wire rack before serving.
