This Lyle's Golden Syrup Apricot Turnover is a great easy-bake recipe, and it's a wonderfully fresh take on a classic dessert.
Preheat your oven to 200°C/180°C fan, Gas Mark 6.
In a mixing bowl, combine the apricot slices, corn starch, Lyle's Golden Syrup, and almond extract. Mix well until all the ingredients are combined and set aside.
On a lightly floured surface, place the puff pastry sheet and gently roll out into a square shape.
Cut the rolled-out pastry sheet into four equal-sized squares.
Take a rolling pin and roll each square into a larger square, measuring about 6 to 7 inches on each side.
Spoon a portion of the apricot mixture into the centre of each square.
Fold one corner of each square over the filling, creating a triangle shape. Press along the edges with a fork to seal the turnovers.
Brush the top of each turnover with the beaten egg wash. Then, make a small incision on the top of each turnover.
Place the turnovers on a baking tray lined with parchment paper.
Bake in the preheated oven for approximately 25 minutes, or until the turnovers have risen and turned golden brown.
Once baked, remove the turnovers from the oven and allow them to cool.
Dust them with icing sugar for an extra touch of sweetness.
