Hot Cross Bun, Marmalade Bread and Butter Pudding

Step 1

Slice each hot cross bun into three, reserving the cross pieces for the top of the pudding.

Step 2

Lightly butter each piece of the bun, and begin to fill the base of the serving dish with them, spread one third of the marmalade over the buns and sprinkle with one third of the fruit, build up the layers with the slices of buns, marmalade and dried fruit until it is all used up.

Step 3

Whisk the eggs, milk, double cream and syrup together and stir in the Cointreau pour the liquid evenly into the serving dish, allow to settle for a few minutes and then bake at 180C Gas Mark 5 for 25 minutes covered with foil and for 10-15 minutes without the tinfoil.

Step 4

Drizzle with a little Lyles Golden Syrup and serve. Enjoy!
