In a large saucepan, melt the butter, Lyle's Golden Syrup and sugars over a low to medium heat, stirring every now and then with a wooden spoon. Add the oats and mix again, until everything is thoroughly combined. Mix through the mincemeat and mixed spice, then press into your prepared baking tin. Bake in the oven for 30-35 minutes until lightly golden brown, then remove from the oven and use a sharp knife to gently score the flapjacks into rectangular bars.
