In a large bowl, whisk together the eggs, whole milk, vanilla extract, and ground cinnamon until well combined.
Heat a large non-stick skillet over medium heat and add a tablespoon of butter. Allow the butter to melt and coat the pan.
Dip each slice of brioche bread into the egg mixture, making sure that both sides are coated well.
Place the coated bread slices onto the hot skillet and cook for 2-3 minutes on each side, until golden brown and cooked through.
Repeat the process with the remaining slices of bread.
