These wholesome biscuits are a perfect combination of hearty oats and crispy cornflakes, creating a texture that's both satisfying and addictive. Whether enjoyed as a snack with a warm cup of tea or as an on-the-go treat, these biscuits offer a balanced combination of flavours and textures that are sure to please both your palate and your cravings for a comforting snack.


Oat and Cornflake Biscuits
Preheat the oven to 180°C (170°C fan). Line a large baking tray or baking sheet with baking paper and set aside.
In a large bowl, combine together the flour, oats, cornflakes, sugar, raisins, apricots, choc chips and coconut.
Whisk in the melted butter, golden syrup and beaten egg, stir well to combine.
Using a small cookie scoop or a spoon, scoop about a tablespoon of the mixture and place into a baking tray. Flatten each biscuit gently on top, using a fork or a back of the spoon.
Bake for 10-12 minutes, until the biscuits are lightly brown. Remove from the oven and allow them to cool. Enjoy!
