Caramel Apple Cheesecake Bars Recipe

Step 1

Preheat the oven to 170°C. Lightly grease and line 8 x 8 inch baking pan with baking paper. Set aside.

Step 2

Using a food processor, pulse the biscuits until they resemble the texture of the wet sand (or use a plastic bag and rolling pin to crush them).

Step 3

Add melted butter and pulse to combine. Transfer the mixture into prepared baking tin, and press firmly into even layer. Place the pan with crust in the fridge, while you prepare the filling.

Step 4

In a bowl of an electric mixer, cream the soft cheese for a couple of minutes until soft and fluffy. Add the sugar, Lyle’s Golden Syrup and vanilla and mix to combine. Add eggs, one at a time, beating well after each addition.

Step 5

Remove the cheesecake crust from the fridge. Pour the cheesecake filling over the crust.

Step 6

In a large mixing bowl, combine the apples, sugar, Lyle’s Golden Syrup and spices. Set aside for a couple of minutes.

Step 7

In another mixing bowl, rub the flour and chilled butter until the mixture resembles coarse breadcrumbs. Add the sugar and cinnamon and briefly rub again to combine.

Step 8

Add the apple layer on top of the cheesecake, then sprinkle the crumble topping over the apples.

Step 9

Bake the cheesecake for 45-50 minutes, until the crumble is golden and the filling is set.

Step 10

Remove from the oven and let it cool completely. Transfer to the fridge for 2 hours, or overnight

Slice the bars, drizzle with caramel sauce and enjoy!
