Sift together the plain flour, ground ginger, and bicarbonate of soda.
Combine the Lyle’s Golden Syrup, butter, and soft dark brown sugar in a saucepan. Gently heat until fully melted.
Stir the liquid ingredients into the flour mixture. Gently knead the dough to bring it together.
Divide the dough into two batches. Roll it out to the thickness of a pound coin, using one batch to cut out gingerbread men and the other for your hanging decorations.
