Sausage Roll Method

Step 1

Finely dice the onion and sweat in a saucepan with the butter.

Step 2

Add the sausage meat into a bowl with the sage, English mustard and sweated onions. Season with salt and pepper and set aside.

Step 3

Place the sausage filling along one side of the puff pastry and brush the egg wash along the other side. Fold over to and press down with a fork to seal.

Step 4

Trim off any excess and use a serrated knife to portion your sausage rolls.

Step 5

Place on a baking sheet, glaze in the egg wash, sprinkle over some fennel seeds and bake at 200 degrees for 30 minutes.

Jam Method

Step 1

In a large, heavy pot over medium heat, cook the bacon, stirring occasionally until crispy. This should take about 8 to 10 minutes.

Step 2

Transfer the bacon to a paper towel-lined plate, reserving about 3 tbsp of bacon fat in the pot.

Step 3

Reduce the heat to medium-low. Add the onion and shallots and cook, stirring occasionally for about 15 minutes, until the onion is softened and golden.

Step 4

Stir in the garlic, brown sugar, Lyles Golden Syrup, vinegar, chilli powder, and cooked bacon. Bring to a simmer, then reduce the heat to low. Cook for 7 to 10 minutes more, stirring occasionally until liquid is reduced and thickened, and the onions are jammy and caramelized.

Step 5

Let cool, then transfer to a jar.
