Today is all about loving plants in every way – including in your baking! 💚
Whether you’re fully plant-based, adapting to dietary requirements or just looking to try something new, there are so many easy swaps that keep your bakes delicious and kind to the planet.
How to make your bakes vegan 👇
Eggs
Use aquafaba – the liquid from a can of chickpeas – as an egg replacement. 3 tablespoons usually equals 1 egg and whips beautifully for cakes and meringues.
Butter
Swap for a plant-based baking block or margarine. Perfect for pastry, cookies, and cakes.
Milk
Oat, almond, soy, or any plant milk works wonderfully in place of cow’s milk. Adjust slightly for texture if needed.
Honey
Replace with Lyle`s Golden Syrup, maple syrup, or agave nectar for natural sweetness.
Vegan baking doesn’t have to be tricky. With these simple swaps, you can enjoy all your favourite bakes while celebrating plants and their power 🌿✨

A chocolatey twist on a classic favourite, perfect for Easter, Mini Egg hot cross buns! 😍
Soft, rich buns packed with mini eggs and finished with a sweet white chocolate cross ✨
How to make them 👇
Ingredients
• 450g bread flour
• 50g cocoa powder
• 7g yeast
• 30g sugar
• 10g salt
• 85g butter
• 300ml milk
• 200g crushed mini eggs
• 50g white chocolate
Method
1️⃣ Heat milk and butter until warm
2️⃣ Mix flour, cocoa, yeast, sugar and salt
3️⃣ Add milk mixture and bring into a dough
4️⃣ Knead for 10 minutes until soft
5️⃣ Add crushed mini eggs
6️⃣ Leave to prove for 1 hour
7️⃣ Divide into 12, shape and place in a tray
8️⃣ Prove again for 1 hour
9️⃣ Bake at 180°C for 18 minutes
🔟 Pipe crosses with melted white chocolate

Celebrate National Sourdough Bread Day with these sticky cinnamon buns, topped with a cream cheese frosting ✨
How to make them 👇
Ingredients
For the dough
• 100g sourdough starter
• 1 egg
• 160ml whole milk
• 30g butter
• 25g sugar
• 300g bread flour
• 5g salt
For the filling
• 100g butter
• 10g cinnamon
• 100g dark sugar
For the icing
• 150g butter
• 150g icing sugar
• 150g soft cheese
Method
1️⃣ Mix all dough ingredients until combined
2️⃣ Cover and leave overnight
3️⃣ Roll into a rectangle on an oiled surface
4️⃣ Spread butter and sprinkle cinnamon sugar
5️⃣ Roll up and cut into swirls
6️⃣ Place in a tin and leave for 2 hours
7️⃣ Bake at 180°C for 20 minutes
8️⃣ Mix icing and spread over slightly cooled buns

🌾 Tips & Tricks – Best Practices for Using Flour 🌾
Happy National Flower Day! 🎉 Today we’re using this as an excuse to give a little love to the unsung hero of baking – flour 🌟
Whether it’s the base for cakes, breads, or biscuits, a few simple tips can make all the difference.
Flour 101 👩🍳
• Self-raising flour = plain flour + baking powder
Add 1 tsp baking powder to 125g plain flour to DIY.
• No sifter? No problem!
Use a balloon whisk to break up lumps instead.
• International recipes alert:
All-purpose flour = plain flour.
• Ditch the cups!
They can weigh very differently depending on size or how packed the flour is – scales are your friend ⚖️
🍀 Guinness Brownies 🍫
Celebrating St Patrick’s Day the sweetest way 🇮🇪✨
Delicious chocolate Guinness brownies topped with a creamy cheesecake-style frosting.
How to make it 👇
Ingredients
• 1 x 440ml Guinness can
• 200g butter
• 280g sugar
• 3 eggs
• 200g chocolate
• 100g plain flour
• 40g cocoa powder
Method
1️⃣ Reduce Guinness for 15 minutes.
2️⃣ Melt butter and chocolate together, then add 120ml Guinness.
3️⃣ Whisk eggs and sugar until fluffy.
4️⃣ Fold everything together gently.
5️⃣ Sift in flour and cocoa and fold.
6️⃣ Bake at 170°C for 25 minutes.
7️⃣ Cool completely in the fridge.
Cream cheese frosting 🤍
Mix 150g butter and 100g icing sugar until pale and fluffy, then add 200g soft cheese. Spread over cooled brownies.
Enjoy!

🦔 Hedgehog Rolls 🦔
Too cute to eat… almost 😍
Celebrate World Wildlife Day with these sweet hedgehog roll! They are perfect for baking with little ones or adding some fun to your bread basket.
How to make them 👇
Ingredients
• 500g white bread flour
• 7g yeast
• 15g sugar
• 10g salt
• 350g tepid water
• Raisins
• Flaked almonds
Method
1️⃣ Mix ingredients together and knead for 10 minutes until smooth.
2️⃣ Prove for 1 hour in a warm place.
3️⃣ Divide into small rolls, pinching one end to create a nose.
4️⃣ Place on a tray, cover and prove for 30 minutes.
5️⃣ Use scissors to snip spikes on the back.
6️⃣ Add raisins and almonds for face details.
7️⃣ Bake at 180°C for 20 minutes until golden.
