The Basic Recipe
  • 300ml full fat milk
  • 2 medium eggs
  • 125g plain flour
  • 25g butter, melted
  • Extra butter for frying
  1. Whisk together the milk and eggs. Put the flour in a large bowl. Pour in the mixture whisking continuously until smooth, then add the melted butter.
  2. Brush a pan with oil or butter then pour around 70ml of batter in to the pan, tilting the pan to cover it evenly.
  3. Cook for around 1 minute until the pancake is cooked and golden in colour. Then give it a flip and cook for a further minute.

Flippin' Tips. Eye on the pancake… Watch the pancake, not the pan! Hold your nerve… Use one fluid motion, no hesitation.! Once is enough… Over flipping will make the pancake tough not fluffy.
