Ingredients 45ml/3 tbsp tomato sauce 30ml/2 tbsp light soy sauce 10ml/2 tsp Lyle’s Golden Syrup 30ml/tbsp fresh lemon juice 15ml/1tbsp sunflower oil A dash of Worcestershire sauce Salt and freshly ground black pepper 4 chicken drumsticks
To serve A selection of salad
To Garnish Fresh sprigs of coriander |

Instructions 1. To make marinade, mix together tomato and soy sauce, syrup, lemon juice, oil, Worcestershire Sauce, salt and pepper in a shallow dish.
2. Carefully cut 3 gashes in top of each drumstick then add to the dish and spoon over the marinade. Leave in the fridge overnight.
3. Using tongs, remove the chicken from the marinade and place under the grill for 20 minutes, basting regularly with the leftover marinade.
Serve immediately with small pieces of foil over the ends of the drumsticks and with salad and a sprig of coriander to garnish. |
