4 rindless sweat-cure rashers of bacon
2 medium eggs
generous pinch ground cinnamon
2 small bananas, peeled
4 slices of white bread
a little butter

Serve with Lyle's Golden Syrup

Lyle’s Golden Syrup


1. Very carefully preheat the grill (ask for help from an adult).

2. Cook the bacon until golden brown on one side then very carefully turn the bacon over using a fork and cook on the other side. When cooked drain on some clean kitchen paper.

3. In a bowl beat the eggs and cinnamon together with a fork.

4. On a chopping board slice the banana lengthways to get long, thin strips.

5. Very carefully dip two slices of bread into the egg. Place onto a clean work surface and lay onto each slice of bread 2 rashers of bacon and 1 banana. Dip the remaining bread into the egg.

6. Top the sandwich with the remaining piece of bread.

7. In a large non-stick frying pan melt the butter. When bubbling put the sandwich onto a fish slice and carefully place into the pan.

8. Cook until golden brown on both sides and thoroughly heated through.

To serve cut each sandwich in half and generously drizzle over the Lyle’s Golden Syrup.
