Toffee Apple Pudding

Water - 100ml

Granulated Sugar - 225g

Lyles Golden Syrup - 30ml

Butter - 145g

Cooking Apples (Peeled, Cored and Sliced) - 450g

Eating Apples (Peeled, Cored and Sliced) -450g

Self Raising Flour - 115g

                        Baking Powder - 1 teaspoon

Eggs - 2

Golden Caster Sugar - 115g

                        Vanilla Extract - ˝ teaspoon

Instructions

1)      Preheat the oven to 180°C,

2)      Put water and granulated sugar into a pan and bring to boil,

3)      Add Lyles Golden Syrup and 30grams of butter then boil again,

4)      Add apples and simmer until soft, put the whole mixture in an ovenproof dish,

5)      Sieve flour into a bowl with the baking powder,

6)      Add eggs, the rest of the butter, the caster sugar and vanilla extract. Whisk together until smooth,

7)      Pour on top of the apple mixture,

8)      Bake for 30-40 minutes,

9)      Serve with a drizzle of Lyles Golden Syrup and vanilla ice cream.
