Syrup Fruit Crunch Cider Cake

Lyles Golden Syrup - 45ml/ 3 tablespoons

Butter or Margarine - 150g

Cooking Apples (Peeled and Chopped) - 350g

Mince Meat - 45ml/ 3 tablespoons

Cornflakes (Crushed) - 50g

Tate & Lyle Caster Sugar - 125g

Eggs (Beaten) - 2

Self Raising Flour - 125g

Dry Cider - 45ml/ 3 tablespoons

 

Instructions

1)      Take a shallow, rectangular tray approximately 35.5cm by 11.5cm, line this with grease foil,

2)      Put Lyles Golden Syrup in a pan with 25g of butter and melt. Add the finely chopped apples, mincemeat and cornflakes, once done set this aside,

3)      Beat the remaining butter and caster sugar in a bowl until pale and fluffy. gradually beat in the egg, fold the flour in and then stir the cider in as well,

4)      Place the mixture into the prepared tray, smooth the surface then spread syrup/apple mixture evenly on top,

5)      Bake in oven 170°C/350°F until firm (45 - 50 minutes approximately)

6)      Allow to cool before serving, keeps well in an airtight container.

7)      ENJOY!
