Golden Syrup Date and Ginger Cake

Boiling Water or Hot Dry Cider -1/2 pint/ 150 ml

Stoned Dates (Chopped) - 8oz

Margarine - 4oz

Soft Rich Brown Sugar - 4oz

Lyles Golden Syrup - 2 tablespoons

Black Treacle - 1 tablespoon

Eggs (Beaten) - 2

Self raising Flour - 6oz

Ground Ginger - 2 teaspoons

Pinch of Salt

Ground Almonds - 2oz/ 50g

 

Instructions

1)      Pour the water over the dates and leave to cool,

2)      Heat the oven to 180°/350°F/ Gas Mark 4,

3)      Grease and line the base of a 23cm round cake tin,

4)      Cream the margarine in with the sugar until light and fluffy,

5)      Beat in Lyles Golden Syrup and Black Treacle, then gradually beat in the eggs,

6)      Sieve in the flour , ginger and salt , then fold in the dates and there soaking liquid also add the almonds,

7)       Pour into the prepared tin and bake in the oven for 50-60 minutes or until well risen and springy to the touch.
