Apple, Golden Syrup and Walnut Muffins

Plain Flour - 1lb

Light Brown Sugar - 3 ˝ oz

Milk - 2 ˝ fl oz

Ground Cinnamon - 2 teaspoons

Salt - 1 ˝ teaspoons

Cooking Apples (Peeled, Cored and Grated) - 1 ˝ lb

Lyles Golden Syrup - 4 tablespoons

Butter (Softened) - 4oz

Bicarbonate of Soda - 2 teaspoon

Mixed Spice - ˝ teaspoon

Eggs (Beaten) - 2

Chopped Walnuts - 3oz

 

Instructions

1)      Beat together all ingredients except apples and walnuts until smooth,

2)      Stir in the grated apples and the walnuts,

3)      Divide the mixture between approximately nine greased and base lined muffin tins.

4)      Bake at 190°C for 25 minutes, until well risen and a skewer inserted in the centre comes out clean

5)      Serve warm. ENJOY!
